Gnocchi di patate

As I already explained in a previous post, gnocchi is a real classic and one of my favorite things to eat. But it you need some time and courage to make them. What is the secret of perfect gnocchi? It’s all about potatoes! Always use the most floury such as red or yellow, especially if aged.

So what do you need for 4 people:

  • 1kg potatoes
  • 300 gr of type 00 (double zero) flour
  • 1 egg
  • pinch of salt

To prepare the gnocchi you’ll need to boil the potatoes first. Take a big pot, put the potatoes in it and fill the pot with water. Now bring the water to a boil and once it’s boiling, you’ll need 30 to 40 minutes (depending on the size) for the potatoes to be ready. You can always test with your fork.

Once the potatoes are cooked you need to peel them when they’re still warm. This makes it a lot easier. Now you need to mash them with a potato press on to the flour. Add the egg and a pinch of salt and start mixing the dough.

Now that all is mixed you’ll need to make the gnocchi. Take small pieces of the dough and start rolling it until your dough is about 1-2 cm thick. Once that is done, you take a sharp knife and start cutting off pieces off 2-3 cm. Remember to keep the dough floured by adding some flour from time to time. This will prevent the gnocchi to stick to each other.

When you’ve cut all the dough in to gnocchi, it’s time to cook them. Take a big pot and fill it with water, a good pinch of salt and bring it to a boil. Once the water starts boiling you can put in the gnocchi. Don’t be to enthusiastic and put in all the gnocchi at once. This will make them stick together. When you see them come up, you’ll have to let them boil for another minute. Take them out off the boiling water, add them on a plate and mix them with your sauce.
